Rhubarb Surprise Pie

Josh's grandma makes a delicious strawberry rhubarb pie. Josh and I love it so much, that as a joke, she gave me the recipe for it for Christmas a few years ago.
Last year, the growing season was so weird that we weren't able to get any rhubarb. So when we opened our weekly CSA package this week and had some in there, we knew exactly what to do. 

Rhubarb Surprise Pie
1 unbaked pie shell
3 cups diced rhubarb
1- 3oz. pkg. of strawberry jello
1/2 cup flour
1 cup sugar
1/2 teaspoon cinnamon
1/4 cup melted butter

Directions: Place pie shell into greased pie plate.  Arrange rhubarb in pie shell.  Sprinkle with strawberry jello.  Combine flour sugar and cinnamon.  Pour over butter and combine.  Sprinkle over rhubarb mixture.  Bake in a 350 degree oven for 50 minutes.

Let cool and enjoy!  For this round, we didn't have quite enough rhubarb, so we added fresh strawberries to get up to 3 cups.  We also used sugar free jello because we had it and Truvia instead of sugar.  The crumble turned into more of a dough-like texture, but it tasted SO good!

BBQ Chicken... On a stick

The list of new foods at the state fair came out today, which makes our dinner tonight especially appropriate.  We made kabobs (kebabs?) with chicken, green pepper, pineapple, and red onion. On a stick, obviously.

All you have to do is put the ingredients on the skewer, grill them up for a while, add a little barbeque sauce, and finish grilling.  We had ours with a spinach salad with raisins, feta, and homemade lime dressing.

Super simple and super delish!

Avery

This may turn into a bit of a new puppy blog for a bit.  Sorry I'm not sorry :)

Avery is a very mellow pup.  We have been very fortunate how well she has taken to her new home.  She has had very few accidents (all our fault for not paying enough attention to her), she sleeps very well, and is not hard to care for.  Every once in a while, she turns into a bit of a wild woman.  Here is a super cute video of her playing with her toys.

2 more days!

Only 2 more days until we take Avery home. We spent the whole night doing a little settling so we can be ready for her.

Most of it was clearing out those last few boxes to make some room, but we did do some stuff for her.

We got her bowls ready (she gets a fancy place mat for now because the one we want to use is still tucked away while we wait for new floors in the kitchen and hallway), hung the dog butt leash hook, assembled the potty bells (we will train her to ring them when she needs to go out), and assembled her crate.

We are ready for you little lady!

Puppymoon

We decided it was high time we took a trip to the lake, and what a perfect way to spend our last weekend without any puppy responsibilities.

We got to make some smores, hang out in the sun (finally!), and Josh got to fish.  Of course we did the usual projects to help out the grandparents.  The outside of the house is cobweb free, sand has been shoveled back onto the beach, and the axel was put back on the dock so it is no longer sinking in the water.  We even got some plants for the new place. I'm hoping to get them planted tomorrow! It is so nice to help them out so they will be able to take a little break from the constant upkeep of the place.

All in all, great weekend.

Searching for sunny days

After what feels like a very long wait, we finally booked our first trip to Florida tonight.  I am SO excited for some sunny weather.  Even though it is supposed to be summer here, we haven't seen more than a day or two of sun.  After today's torrential downpours (again), the sun is feeling pretty far away.

I was also (finally) able to mail the bachelorette party invitations I made for the upcoming Harry Potter bash today!  I am unbelievably excited for this party.

Mondays are the day our breeder normally posts new pictures of the puppy. This Monday I stalked the website, with no luck. Then Tuesday came. Still no luck. Finally Josh got a call saying that her computer was down. So, unfortunately no pictures this week.  On the bright side, we get to go visit Avery in person on Friday! Get ready for some more pictures.

Getting settled

Our current task is to work on getting settled. It is coming along slowly but surely. It is nice to be reacquainted with some of our things that we haven't seen for about a month.
