Josh's grandma makes a delicious strawberry rhubarb pie. Josh and I love it so much, that as a joke, she gave me the recipe for it for Christmas a few years ago.
Last year, the growing season was so weird that we weren't able to get any rhubarb. So when we opened our weekly CSA package this week and had some in there, we knew exactly what to do.
Rhubarb Surprise Pie
1 unbaked pie shell
3 cups diced rhubarb
1- 3oz. pkg. of strawberry jello
1/2 cup flour
1 cup sugar
1/2 teaspoon cinnamon
1/4 cup melted butter
Directions: Place pie shell into greased pie plate. Arrange rhubarb in pie shell. Sprinkle with strawberry jello. Combine flour sugar and cinnamon. Pour over butter and combine. Sprinkle over rhubarb mixture. Bake in a 350 degree oven for 50 minutes.
Let cool and enjoy! For this round, we didn't have quite enough rhubarb, so we added fresh strawberries to get up to 3 cups. We also used sugar free jello because we had it and Truvia instead of sugar. The crumble turned into more of a dough-like texture, but it tasted SO good!
